The Tofu Shop has been a registered organic food processor since 1985. We have been using organically grown, non-genetically modified soybeans to create our products for over 20 years. We began sourcing as many other organic ingredients as possible in the 1990s. In the meantime, a move for a national organic standard was underway. The Tofu Shop was one of over 200,000 businesses and citizens that sent a disapproving letter to the National Organic Standards Board in 1999 when they proposed seriously watered down organic standards. The National Organic Program has since drafted a standard similar to the California Organic Foods Act of 1990. The national rule took effect on October 21st, 2002. |

The Tofu Shop began the process of third party organic certification in early 2002. We chose California Certified Organic Farmers because they have a longstanding reputation for integrity and independence. An independent inspector has visited the Shop twice to watch us making our products. |

All of our products are now certified organic, with greater than 95% organic ingredients. Our tofu products can not be labeled 100% organic under the new law because our curdling agents, nigari (magnesium chloride from sea water) and gypsum (calcium sulfate from the earth), are not at the present time considered organic. There are only 2 ingredients, both spices, which we haven't been able to source organic. We're still looking... The organic industry is growing every day, and we're confident that we'll be able to get them soon. In the meantime, we're using non-irradiated, non-genetically modified spices. We think organic truly does taste better! And we're proud to support the work of organic farmers, who tend the soil for the generations to come. |
