In 1972 William Shurtleff and Akiko Aoyagi began comprehensive research on soy foods in Japan while writing The Book of Tofu. In 1976 they founded Soyinfo Center (named Soyfoods Center until 2006) in California. Visit the Soyinfo Center for a wealth of information about soy.
